The confectionery truffles have a hazelnut gianduja centre: roasted and finely ground hazelnuts, sugar, cocoa mass and cocoa butter are conched until a smooth, nutty-chocolatey mass is formed. The chocolatier fills small hollow moulds made of crunchy chocolate coating with this nougat mass. Due to the relatively high nut and fat content, the texture inside is particularly melt-in-the-mouth and delivers a distinctly nutty, caramel-chocolate flavour, while the coating provides the crunchy ‘snap’. The nougat truffle thus combines two worlds of indulgence: the creamy richness of a truffle and the aromatic roasted flavour of nougat.
